Virginia is the author of two cookbooks, Eat Caribbean and Walkerswood Caribbean Kitchen, both published by Simon & Schuster UK.
Eat Caribbean takes readers on a voyage around the islands of the Caribbean with a wide-ranging collection of 100 recipes, from classic to contemporary and beach to banquet, as well as exquisite location photographs and personal anecdotes.
Walkerswood Caribbean Kitchen, a compilation of traditional and non-traditional recipes found throughout Jamaica, features recipes for using Walkerswood seasonings, sauces and spices. The books have been translated into Dutch, French and German.
Virginia studied graphics in Los Angeles and fine art in New York, then lived in London, New York and Hawaii, before returning to Jamaica to aid Walkerswood in its mission to provide the rural community with employment opportunities.”
